Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.
In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add the molasses and the egg to the butter mixture and beat until well combined.
In another bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Scoop out tablespoon-sized portions of dough, roll them into balls, and then roll each ball in the additional granulated sugar to coat.
Place the dough balls about 2 inches apart on the prepared baking sheets.
Bake the cookies in the preheated oven for 8-10 minutes, or until the cookies have spread and the edges are just starting to set. The centers should appear slightly underbaked for a chewy texture.
Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Serve the cookies warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 1 week.
