Season both sides of the chicken breasts with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown. Remove them from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil.
Add the minced shallot and garlic to the skillet. SautΓ© for 2-3 minutes until fragrant and softened.
Pour in the balsamic vinegar and stir, scraping up any browned bits from the pan.
Add the honey, chicken stock, and cherry preserves to the skillet. Stir well to combine.
Bring the sauce to a simmer, then let it cook for 3-5 minutes, allowing it to reduce and thicken slightly.
Return the chicken breasts to the skillet. Spoon the glaze over the chicken and sprinkle the fresh thyme leaves on top.
Cover the skillet with a lid and simmer on low heat for 10-12 minutes, or until the chicken is fully cooked and the internal temperature reaches 165Β°F (74Β°C).
Remove the chicken breasts from the skillet and place them on a serving platter.
Drizzle the remaining cherry balsamic glaze over the chicken before serving. Enjoy!
