Preheat your oven to 400°F (200°C).

Wash the potatoes thoroughly, leaving the skins on. Slice them lengthwise into thin planks, about 1/8-inch thick.

Brush both sides of the potato slices with 2 tablespoons of olive oil and lay them on a baking sheet lined with parchment paper. Roast in the oven for 10 minutes, flipping halfway through, until they are soft and pliable but not fully cooked. Set aside to cool slightly.
