Cut the chicken breasts into bite-sized pieces, about 1 inch wide.
In a medium bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
In a second bowl, beat the eggs until smooth.
Place the all-purpose flour in a separate third bowl for dredging.
Grate the cheddar cheese and set it aside.
Set up a breading station: coat each chicken piece in flour, then dip it into the egg mixture, and finally press it into the breadcrumb mixture to coat it evenly.
Heat the vegetable oil in a large skillet over medium-high heat. You’ll need enough oil to shallow-fry the chicken pieces.
