Indulge in the comforting flavors of cheese pasties, a classic handheld treat packed with rich, cheesy goodness. This recipe combines a buttery, flaky pastry made from scratch with a luscious filling of sharp cheddar, creamy cream cheese, zesty mustard, and fresh spring onions. Perfectly seasoned and baked to golden perfection, each pasty offers a delightful balance of crisp texture and gooey filling. Ideal for a savory snack, casual lunch, or party appetizer, these homemade cheese pasties are an irresistible crowd-pleaser. With simple ingredients and a quick prep time, you'll be savoring these golden pockets of cheesy bliss in under an hour.
In a large bowl, mix the flour and salt together.
Add the cold, cubed butter to the flour, and using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
Gradually add the cold water, one tablespoon at a time, mixing with a fork until the dough begins to come together.
Turn the dough out onto a lightly floured surface, knead gently into a smooth ball, then wrap in cling film and chill in the fridge for 20 minutes.
In a separate bowl, mix the grated cheddar cheese, cream cheese, mustard, and finely sliced spring onions. Season with pepper to taste.
Preheat your oven to 200°C (180°C fan)/400°F/Gas Mark 6.
Roll out the chilled pastry on a floured surface until it's about 3mm thick.
Using a round cutter (about 12cm in diameter), cut out circles of pastry. Gather and re-roll scraps if needed to make more circles.
Place a tablespoon of the cheese filling in the center of each pastry circle. Dampen the edges with a little water, fold the pastry over into a semi-circle, and press the edges together to seal.
Crimp the edges with a fork to fully seal and give a decorative finish.
Place the assembled pasties onto a baking tray lined with parchment paper.
Brush the tops of the pasties with the beaten egg for a golden finish.
Bake in the preheated oven for 20–25 minutes, or until the pasties are golden brown and crisp.
Remove from the oven and allow to cool on a wire rack for a few minutes before serving.
