πŸ“ Instructions

12 steps
1

Preheat the oven to 180Β°C (350Β°F).

2

Blanch the spinach in boiling water for 1-2 minutes until wilted. Drain it well, squeezing out excess water, and chop finely.

3

In a mixing bowl, combine the spinach, ricotta cheese, cream cheese, grated Parmesan, eggs, salt, black pepper, and nutmeg. Mix thoroughly until smooth and evenly combined.

4

Line a baking tray with parchment paper. Spread the spinach and cheese mixture evenly into a rectangular shape, about 1 cm thick.

5

Bake the spinach mixture in the preheated oven for 12-15 minutes, or until it sets and feels firm to the touch.

6

Once baked, remove from the oven and allow the mixture to cool slightly. Use the parchment paper to help roll it into a tight log (like a roulade). Wrap it in the parchment and chill it in the refrigerator for at least 30 minutes.

7

Slice the baguette into 1 cm thick slices. Brush both sides of each slice with olive oil.

8

Toast the bread slices under the grill or in a preheated skillet until golden and crispy on both sides. Set aside.

9

Melt the butter in a small pan and add the minced garlic. Cook for 1-2 minutes until fragrant. Brush the toasted baguette slices lightly with the garlic butter.

10

Remove the chilled roulade from the refrigerator and slice it into 1 cm thick rounds.

11

Place one slice of the roulade on top of each garlic buttered baguette slice. Garnish with a fresh basil leaf.

12

Serve immediately and enjoy this elegant and flavorful appetizer!
