In a food processor, combine the shredded Cheddar cheese, shredded Monterey Jack cheese, all-purpose flour, unsalted butter, kosher salt, paprika, and cayenne pepper (if using). Pulse until the mixture resembles coarse crumbs.
Add 1 tablespoon of ice water and pulse the mixture again. Repeat with the second tablespoon of ice water. Continue pulsing until the dough begins to come together.
Transfer the dough to a lightly floured surface and form it into a disc. Wrap the dough in plastic wrap and refrigerate for at least 20 minutes to allow it to firm up.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a pizza cutter or a sharp knife to cut the dough into 1-inch squares. Alternatively, use a small cookie cutter for fun shapes.
