  • 150 g Char Siew (Chinese barbecued pork), diced finely
  • 1.5 tbsp Hoisin sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Soy sauce
  • 1 tsp Sugar
  • 1 tsp Cornstarch
  • 2 tbsp Water (for slurry)
  • 0.5 tsp Sesame oil
  • 1 pcs Egg (beaten, for egg wash)
  • 1 tbsp White sesame seeds (optional, for garnish)

1. In a large bowl, combine all-purpose flour and chilled cubed butter. Use your fingertips or a pastry cutter to blend until the mixture resembles coarse breadcrumbs.

3. In a small bowl, mix cornstarch and 2 tbsp of water to create a slurry. Set aside.

4. In a skillet over medium heat, add the diced Char Siew, hoisin sauce, oyster sauce, soy sauce, sugar, and sesame oil. Stir well to combine.

5. Reduce the heat to low and add the cornstarch slurry to the mixture. Cook for 1-2 minutes, stirring constantly, until the filling thickens. Remove from heat and cool completely.

6. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.

7. Roll out the chilled dough on a lightly floured surface to about 3 mm (1/8 inch) thick. Cut the dough into 12 squares, each approximately 8 cm x 8 cm (3 inches x 3 inches).

8. Place a spoonful of the cooled Char Siew filling in the center of each square. Fold one side over to form a triangle and press the edges together with your fingers or a fork to seal.

9. Arrange the puffs on the prepared baking tray. Brush the tops with beaten egg and sprinkle with sesame seeds, if using.
