Bring a pot of water to a boil. Blanch the cauliflower florets for 2-3 minutes, then drain and pat dry. Set aside.

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated parmesan cheese, egg, 2 minced garlic cloves, chopped parsley, salt, and black pepper. Mix until well combined.
