Transform your next dinner into a show-stopping culinary experience with Can Can Chicken, a flavorful twist on traditional roasted chicken. This recipe combines the smoky allure of grilling or roasting with the subtle, aromatic infusion of beer and herbs, resulting in a juicy, tender bird with a perfectly crispy skin. The seasoning blend—featuring paprika, garlic powder, onion powder, and dried thyme—adds a bold, savory kick, while a hint of lemon and rosemary tucked into the beer can enhances the aroma as the chicken cooks upright for even browning. Perfectly cooked in just over 90 minutes, this easy yet impressive dish serves four and pairs beautifully with grilled vegetables or roasted potatoes. Whether you're hosting a backyard barbecue or crafting a cozy family meal, Can Can Chicken is sure to be the star of your table.
Preheat your grill or oven to 375°F (190°C). If using a grill, set it up for indirect heat.
Remove the giblets from the chicken (if included) and pat it dry with paper towels. Set aside.
In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and dried thyme.
Rub the chicken all over with olive oil, then generously season the outside and inside of the bird with the spice mixture.
Open the beer can and pour out (or drink) about half of the beer, leaving the remainder in the can. Using a can opener, carefully remove the top of the can for better steam circulation.
Place a few rosemary leaves and a thin lemon wedge into the beer can for added flavor.
Slide the chicken cavity over the beer can so that the bird is upright and the can is securely inside.
Carefully place the chicken (still upright on the can) on a sturdy roasting pan or directly on the grill over indirect heat.
Roast the chicken in the oven or grill for 1 hour and 15-30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast and 175°F (80°C) in the thigh. Rotate the chicken halfway during cooking for even browning.
Once cooked, carefully remove the chicken from the heat and let it rest for 10 minutes before removing it from the beer can.
Carve and serve the chicken with your favorite sides!
