Preheat the oven to 200°C (400°F).

Start by making the tomato chilli jam. Finely chop the garlic and red chilli. In a medium saucepan over medium heat, add 1 tablespoon of olive oil, followed by the garlic and chilli. Sauté for 1-2 minutes until fragrant.

Add the cherry tomatoes, brown sugar, and balsamic vinegar to the pan. Stir well, reduce the heat to low, and simmer for 25-30 minutes until thickened. Stir occasionally to prevent sticking.
