📝 Instructions

9 steps
1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

2

While the pasta is cooking, heat a large skillet over medium heat. Add the bacon strips and cook until crispy, about 6–8 minutes. Remove the bacon and place it on a plate lined with paper towels to drain. Once cooled, crumble the bacon into bite-sized pieces.

3

In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the olive oil and minced garlic. Sauté for 1 minute, or until fragrant.

4

Add the halved cherry tomatoes to the skillet and cook for 3–4 minutes, stirring occasionally, until they become slightly softened and release their juices.

5

Pour the heavy cream into the skillet. Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using), until the cheese melts and the sauce becomes smooth and creamy.

6

Add the drained pasta to the skillet and toss gently to coat it in the sauce. If the sauce is too thick, gradually add reserved pasta water, a tablespoon at a time, until the desired consistency is reached.

7

Turn the heat to low and stir in the fresh baby spinach or arugula. Cook for 1–2 minutes, or until the greens are wilted.

8

Remove the skillet from heat and stir in the crumbled bacon pieces.

9

Serve the pasta immediately, garnished with fresh basil leaves if desired. Enjoy!
