Line a baking sheet with parchment paper. Wash the bell peppers, cut them in half lengthwise, and remove the seeds and membranes.
Place the bell pepper halves cut-side down on the baking sheet. Drizzle with 1 tablespoon of olive oil and roast in the oven for 20 minutes or until the skins are blistered and slightly charred.
