Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes, with their juices
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 2 cups shredded Mexican cheese blend
  • 1 bag (32 oz) tater tots
  • 2 stalks green onions, sliced (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink, breaking it apart with a wooden spoon. Drain excess grease if necessary.

Step 3

Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until softened and fragrant.

Step 4

Stir in the black beans, kidney beans, corn, diced tomatoes (with juices), tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 5 minutes to let the flavors combine.

Step 5

Reduce the heat to low and stir in the softened cream cheese until melted and fully incorporated into the mixture.

Step 6

Transfer the skillet mixture to the prepared baking dish, spreading it out evenly.

Step 7

Sprinkle 1 cup of the shredded Mexican cheese blend evenly over the top of the mixture.

Step 8

Arrange the tater tots in a single layer on top of the casserole, covering the surface completely.

Step 9

Bake in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.

Step 10

Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded Mexican cheese on top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 11

Let the casserole rest for 5-10 minutes before serving. Garnish with sliced green onions, if desired.
