  • 1 cup Clam juice
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Thyme (optional, for garnish)

Directions

Step 1

In a large pot over medium heat, melt the butter.

Add the flour to the melted butter and whisk constantly to create a roux. Cook the roux for about 2 minutes to remove the raw flour taste, but do not let it brown.
