Rinse and sort the dried navy beans, discarding any debris or stones.
In a large pot, combine the beans with 6 cups of water. Bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour, partially covered, until the beans are tender but not mushy. Drain and set aside.
Preheat your oven to 300Β°F (150Β°C).
In a large oven-safe Dutch oven or pot, cook the diced bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
