Ingredients

  • 16 oz Cheese tortellini
  • 2 cups Cherry tomatoes, halved

  • 3 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove Garlic, minced
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 7–9 minutes. Drain and rinse under cold water to cool the pasta quickly.

In a large mixing bowl, combine the cherry tomatoes, diced cucumber, diced red bell pepper, sliced black olives, and thinly sliced red onion.
