📝 Instructions

10 steps
1

Soak the vermicelli in warm water for about 10 minutes until they soften. Drain and set aside.

2

In a large skillet, heat the oil for deep frying to 180°C (350°F).

3

Using a slotted spoon or spider, lower a small amount of vermicelli into the hot oil. Fry until golden brown and crispy, about 1-2 minutes. Remove and drain on paper towels. Repeat with the remaining vermicelli.

4

In a separate large pan or wok, add 2 tablespoons of the frying oil, then sauté the minced garlic until fragrant.

5

Add the julienned carrots, red bell pepper, and green bell pepper to the garlic. Stir-fry for around 3-4 minutes or until the vegetables start to soften.

6

Add the bean sprouts to the pan, and mix everything together.

7

In a small bowl, combine the soy sauce, oyster sauce, cornstarch, water, salt, and black pepper. Mix until smooth.

8

Pour the sauce mixture over the vegetables and stir well to evenly coat and thicken. Cook for another 2-3 minutes until the sauce thickens and all vegetables are cooked through.

9

To serve, arrange the fried vermicelli on a serving platter as if creating a nest shape. Spoon the cooked vegetable mixture into the center of the nest.

10

Serve immediately while hot and enjoy!
