Ingredients

  • 1 pound ground turkey
  • 0.5 cup breadcrumb
  • 1 large egg
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery stalks, sliced
  • 8 cups chicken broth
  • 1 14.5-ounce can diced tomatoes, canned
  • 1 leaf bay leaf
  • 2 cups baby spinach leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, Parmesan cheese, minced garlic, dried oregano, salt, and black pepper. Mix until well combined.

Step 2

Shape the mixture into small meatballs, about 1 inch in diameter. Place them on a plate and set aside.

Step 3

Heat the olive oil in a large soup pot over medium heat. Add the diced onion and sauté for 2–3 minutes until translucent.

Step 4

Add the sliced carrots and celery to the pot and sauté for another 3–4 minutes.

Step 5

Pour in the chicken broth and add the canned diced tomatoes (with juice) along with the bay leaf. Bring the mixture to a gentle boil.

Step 6

Carefully drop the turkey meatballs into the simmering soup, one at a time, ensuring they stay intact.

Step 7

Reduce the heat to low, cover the pot, and let the soup simmer for 20 minutes, allowing the meatballs to cook through and the flavors to meld.

Step 8

Stir in the baby spinach leaves and let them wilt for 1–2 minutes.

Step 9

Remove the bay leaf and discard it.

Step 10

Taste the soup and adjust seasoning with salt and black pepper if needed.

Step 11

Ladle the soup into bowls, garnish with chopped fresh parsley, and serve warm.
