Heat 1 tablespoon of oil in a pan over medium heat.
Add half of the besan (100 grams) to the pan and roast it until it turns golden brown, stirring continuously to prevent it from burning. This should take about 4-5 minutes. Remove from heat and set aside.
In another pan, heat the remaining oil over medium heat.
Add cumin seeds and mustard seeds to the hot oil and let them splutter.
Add the chopped onion to the pan and sauté until it becomes translucent.
Stir in the chopped tomato and cook until it softens.
Add the chopped green chili, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well to combine all the spices.
Pour 2 cups of water into the pan and bring it to a boil.
Gradually add the remaining uncooked besan (100 grams) into the boiling water while stirring continuously to avoid lumps.
Once all the besan is incorporated into the mixture, add the roasted besan. Stir to mix everything well.
Lower the heat and let the sabji simmer for about 8-10 minutes or until the besan is fully cooked and the mixture thickens.
Garnish the sabji with chopped fresh coriander leaves.
Serve hot with roti or rice.
