Preheat the oven to 200°C (390°F).
Finely chop the onion and garlic.
Heat olive oil in a pan over medium heat and sauté the chopped onion and garlic until they are softened and translucent, about 5 minutes. Set aside to cool.
In a large mixing bowl, combine the ground beef, sautéed onion and garlic, breadcrumbs, Worcestershire sauce, salt, black pepper, and paprika. Mix until well combined.
Lightly beat the egg and add half of it to the beef mixture. Mix thoroughly. Reserve the remaining egg for egg wash.
Lay out the puff pastry sheets on a lightly floured surface. Divide each sheet in half.
Place a quarter of the beef mixture along the long edge of each pastry piece, forming a log shape.
Carefully roll the pastry over the beef mixture to encase it, sealing the ends by pressing firmly.
Cut each roll into four equal pieces and place them on a baking tray lined with parchment paper.
In a small bowl, mix the remaining beaten egg with a tablespoon of milk. Brush this mixture over the top of the sausage rolls to give them a golden finish.
Bake in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.
