From home to gym to on-the-go
In a small saucepan, warm the milk until it is lukewarm (about 38°C or 100°F).
In a mixing bowl, combine the lukewarm milk with sugar and dry yeast. Let it sit for 5 minutes until it becomes frothy.
In a large bowl, mix the all-purpose flour and salt.
Add the yeast mixture, egg, and butter into the flour mixture. Knead the dough until it is smooth and elastic, about 10 minutes by hand or 5 minutes with a stand mixer equipped with a dough hook.
Cover the bowl with cling wrap or a damp towel and let the dough rise in a warm place for about 1 hour or until it doubles in size.
Once risen, punch down the dough to release the air. Divide the dough into 8 equal portions and form each portion into a ball.
Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
Place each dough ball onto the prepared baking sheet, leaving enough space between each bun. Cover the tray with a damp cloth and let the dough rise again for 20-30 minutes or until puffy.
Bake in the preheated oven for 15-18 minutes or until golden brown.
Allow the buns to cool on a wire rack.
While the buns are cooling, finely chop the scallions and mix with mayonnaise.
Once the buns have cooled slightly, cut a slit on each bun. Be careful not to cut all the way through.
Open each bun gently and spread a layer of the scallion mayonnaise inside.
Fill each bun generously with beef floss.
Sprinkle the top with white sesame seeds for added texture and garnish, serve and enjoy.
