Cut the tops off the tomatoes and use a spoon to carefully scoop out the insides, creating hollow shells. Reserve the tomato pulp and juice in a bowl.
Cook the orzo pasta according to the package instructions, using water or broth to add flavor. Once cooked, drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautΓ© until fragrant, about 1 minute.
