Preheat your oven to 200Β°C (400Β°F) and line a baking sheet with parchment paper.
In a large skillet over medium heat, cook the ground pork until browned and fully cooked. Remove any excess fat from the pan.
Add the grated carrot, shredded cabbage, chopped green onions, minced garlic, and grated ginger to the skillet. Cook for 5β7 minutes, stirring occasionally, until the vegetables are softened.
Stir in the soy sauce, sesame oil, salt, and black pepper. Mix well, and then remove from heat. Allow the filling to cool slightly.
Lay a spring roll wrapper flat on a clean surface. Place about 2 tablespoons of the filling near one corner of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll it up tightly. Brush a small amount of the beaten egg along the edge to seal the roll. Repeat with the remaining wrappers and filling.
Place the spring rolls seam-side down on the prepared baking sheet. Lightly spray the tops of the rolls with cooking spray to encourage crisping.
Bake the spring rolls in the preheated oven for 15β20 minutes, or until they are golden brown and the wrappers are crispy, turning them halfway through for even cooking.
Serve warm with your favorite dipping sauce, such as sweet chili sauce or soy-based dipping sauce.
