In a large mixing bowl, combine ground pork, shredded cabbage, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, and cornstarch. Mix thoroughly until evenly combined.

Place 1 gyoza wrapper on a flat surface and add 1 teaspoon of the pork filling into the center of the wrapper.

Reduce the heat to medium, add 1/4 cup of water to the skillet, and immediately cover with a lid. Allow the pot stickers to steam for 5-7 minutes or until the filling is fully cooked and wrappers are tender.

Remove the lid and let the remaining water evaporate. If needed, add an additional tablespoon of oil and cook uncovered for 1-2 minutes to crisp up the bottoms again.
