📝 Instructions

10 steps
1

Clean the whole chicken and pat it dry. Set aside.

2

In a blender or food processor, blend the garlic, ginger, shallots, turmeric, coriander, cumin, lemongrass, salt, and black pepper until it forms a smooth paste.

3

In a mixing bowl, combine the spice paste with sweet soy sauce, soy sauce, honey, lime juice, and cooking oil. Mix well.

4

Rub the marinade all over the chicken, including under the skin if possible, for extra flavor. Pour any excess marinade into the cavity of the chicken.

5

Cover the chicken with plastic wrap or place it in a resealable bag. Let it marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

6

Preheat the oven to 200°C (400°F). Place the marinated chicken on a roasting pan or a baking tray lined with foil. Pour 100 ml of water into the pan to keep the chicken moist during roasting.

7

Roast the chicken in the oven for 50 to 60 minutes or until the skin is golden brown and the internal temperature reaches 75°C (165°F) when measured at the thickest part of the meat.

8

Every 20 minutes, baste the chicken with the juices from the pan to keep it moist and flavorful.

9

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.

10

Serve warm with steamed rice or as part of a larger Malay-style meal. Enjoy!
