Ingredients

  • 500 grams Ground beef or lamb
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 1 cup Frozen peas
  • 2 large Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 1 cup Beef or chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon All-purpose flour
  • 4 large Russet potatoes, peeled and cubed
  • 4 tablespoons Butter
  • 1 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 cup Cheddar cheese, shredded (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of salted water to a boil, add the cubed potatoes, and cook for 15-20 minutes until fork-tender.

Step 3

Meanwhile, heat a large skillet over medium-high heat. Add the ground beef or lamb and cook until browned, about 7-8 minutes. Drain off any excess fat.

Step 4

Add the diced onion, carrots, and garlic to the skillet. Cook for 5 minutes until the vegetables start to soften.

Step 5

Stir in the tomato paste, Worcestershire sauce, and flour. Cook for 1-2 minutes to create a roux.

Step 6

Pour in the beef or chicken stock and stir well to combine. Simmer for 5-7 minutes until the mixture thickens. Add the peas at the end and stir them in. Season with salt and black pepper.

Step 7

Drain the cooked potatoes and return them to the pot. Add the butter, milk, and a pinch of salt and pepper. Mash until smooth and creamy.

Step 8

Transfer the meat and vegetable filling into a baking dish and spread it out evenly.

Step 9

Spread the mashed potatoes over the top of the filling, smoothing it out with the back of a spoon. If using cheddar cheese, sprinkle it over the mashed potatoes.

Step 10

Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbling.

Step 11

Let the Shepherd's Pie rest for 10 minutes before serving. Enjoy!
