Ingredients

  • 2 pounds ground beef
  • 1 pound ground pork
  • 1 large yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 1 celery stalk, finely diced
  • 4 garlic cloves, minced
  • 1.5 cups breadcrumbs
  • 0.75 cup milk
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup ketchup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons brown sugar
  • 1 teaspoon vinegar (white or apple cider)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking sheet.

Step 2

In a large skillet over medium heat, add a drizzle of oil and sauté the diced onion, bell pepper, celery, and garlic for 4-5 minutes, or until softened. Set aside to cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, eggs, Worcestershire sauce, Dijon mustard, salt, pepper, paprika, and thyme.

Step 4

Add the sautéed vegetable mixture to the bowl and mix everything until just combined. Avoid overmixing as this can make the meatloaf dense.

Step 5

Transfer the meat mixture into the prepared loaf pan or shape it by hand on the baking sheet into a loaf approximately 9 inches by 5 inches.

Step 6

In a small bowl, whisk together the ketchup, brown sugar, and vinegar to create the glaze.

Step 7

Spread half of the glaze evenly over the top of the meatloaf. Reserve the other half for later.

Step 8

Bake the meatloaf in the preheated oven for 45-50 minutes. Remove from the oven and spread the remaining glaze over the top.

Step 9

Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until an internal temperature of 160°F (71°C) is reached.

Step 10

Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
