Ingredients

  • 1 lb Ground beef (80/20 lean-to-fat ratio)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 tbsp Unsalted butter
  • 1 large Yellow onion
  • 4 Swiss cheese slices
  • 4 Cheddar cheese slices
  • 8 slices Rye bread

Directions

Step 1

In a mixing bowl, combine the ground beef with salt and black pepper. Mix gently until just combined. Divide the mixture into four equal portions and shape them into thin patties, slightly larger than the bread slices as they will shrink during cooking.

Step 2

Peel and thinly slice the yellow onion. In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized, about 15-20 minutes. Reduce the heat if they begin to brown too quickly. Remove from the skillet and set aside.

Step 3

In the same skillet, heat 1 tablespoon of butter over medium-high heat. Cook the beef patties, 3-4 minutes on each side, until they are fully cooked through and have a nice sear. Remove from the skillet and set aside to rest.
