Ingredients

  • 8 oz Cream cheese
  • 0.5 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 6 Large flour tortillas
  • 0.25 cup Granulated sugar
  • 1 tsp Ground cinnamon
  • 2 cups Vegetable oil
  • 1 cup Whipped cream
  • 0.5 cup Strawberry or chocolate sauce (optional)

Directions

Step 1

In a medium mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

Step 2

Lay out the flour tortillas on a clean surface. Spoon 2–3 tablespoons of the cheesecake filling onto the center of each tortilla.

Step 3

Fold in the sides of the tortilla, then tightly roll it up like a burrito to encase the filling. Seal the edges with a dab of water to prevent them from opening during frying.

Step 4

In a small bowl, mix the granulated sugar and ground cinnamon. Set aside for later.

Step 5

In a deep skillet or pot, heat the vegetable oil over medium heat to 350°F (175°C). You can test the oil by dipping a small piece of tortilla into it—if it sizzles, it’s ready.

Step 6

Carefully place one or two of the rolled tortillas into the hot oil at a time. Fry for 2–3 minutes on each side or until golden brown and crispy.

Step 7

Remove the fried chimicheesecakes with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Step 8

While still warm, roll the fried chimicheesecakes in the cinnamon-sugar mixture to coat them evenly.

Step 9

Serve warm with a dollop of whipped cream and a drizzle of strawberry or chocolate sauce, if desired.
