Ingredients

  • 400 grams Button mushrooms
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 120 milliliters Dry Chardonnay
  • 60 milliliters Chicken stock
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh parsley

Directions

Step 1

Clean the button mushrooms using a damp paper towel and trim any tough stems. Slice mushrooms into 1/4-inch thick pieces if they are large, or leave them whole if they are small.

Step 2

Finely mince the garlic cloves and chop the fresh parsley, setting both aside.

Step 3

In a large skillet, heat the unsalted butter and olive oil over medium heat until the butter is melted and slightly foamy.

Step 4

Add the mushrooms to the skillet, spreading them out into a single layer. Allow them to cook undisturbed for 4-5 minutes until they develop a golden-brown color on one side.

Step 5

Stir the mushrooms and cook for another 3-4 minutes until evenly browned and softened.

Step 6

Reduce the heat to medium-low and add the minced garlic, stirring constantly for about 30 seconds, being careful not to burn the garlic.

Step 7

Pour in the Chardonnay and chicken stock, stirring to coat the mushrooms. Simmer the mixture for 5-7 minutes until most of the liquid has reduced and the mushrooms are coated in a glossy sauce.

Step 8

Season the mushrooms with salt and freshly ground black pepper to taste.

Step 9

Remove the skillet from the heat and sprinkle the chopped parsley over the mushrooms as a garnish.

Step 10

Serve warm as a topping for grilled steak, roasted chicken, or as an elegant side dish.
