πŸ“ Instructions

11 steps
1

Preheat your oven to 375Β°F (190Β°C). Line two baking sheets with parchment paper.

2

Peel, core, and finely dice the apples into small cubes.

3

In a medium saucepan over medium heat, melt the butter. Add the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and flour. Cook the mixture for about 5-7 minutes until the apples are softened and the mixture thickens, stirring occasionally. Set aside to cool.

4

Roll out one of the pie crusts on a lightly floured surface. Using a round cookie cutter (approximately 2.5-3 inches in diameter), cut out as many circles as possible and place them onto one of the prepared baking sheets.

5

Place a small spoonful of the apple mixture in the center of each circle, making sure not to overfill.

6

Roll out the second pie crust and cut out the same number of circles. Use a small knife or cookie cutter to create slits or decorative openings in each circle to allow ventilation during baking.

7

Brush the edges of the bottom crusts with a small amount of water, then lay the top crusts over the filling. Gently press the edges together and crimp with a fork to seal.

8

In a small bowl, beat the egg and water together to create an egg wash. Brush the tops of the cookies with the egg wash and sprinkle with coarse sugar if desired.

9

Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.

10

Allow the Apple Pie Cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

11

Serve and enjoy these deliciously sweet treats!
