Ingredients

  • 4 pounds corned beef brisket
  • 10 cups cold water
  • 1 large yellow onion
  • 4 medium carrots
  • 5 medium potatoes
  • 1 head green cabbage
  • 4 large garlic cloves
  • 1 tablespoon whole black peppercorns
  • 3 whole bay leaves
  • 4 whole whole cloves
  • 1 teaspoon mustard seeds
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons butter (optional for vegetables)
  • 2 tablespoons fresh parsley (for garnish)

Directions

Step 1

Rinse the corned beef brisket under cold running water to remove excess brine and set aside.

Step 2

Peel and quarter the onion, and then peel and lightly crush the garlic cloves.

Step 3

Place the corned beef brisket in a large pot or Dutch oven. Add 10 cups of cold water or enough to fully submerge the brisket.

Step 4

Add the onion, garlic, whole black peppercorns, bay leaves, cloves, mustard seeds, and apple cider vinegar into the pot.

Step 5

Bring the pot to a boil over high heat, then reduce the heat to low. Cover and let simmer gently for 3 hours, skimming off any foam that rises to the surface.

Step 6

While the beef is simmering, peel and cut the carrots into 2-inch pieces, halve the potatoes, and core and quarter the cabbage.

Step 7

After 3 hours of cooking, add the carrots and potatoes to the pot. Continue to simmer for 25-30 minutes, or until the vegetables start to become tender.

Step 8

Add the cabbage to the pot and cook for an additional 15-20 minutes or until the cabbage is tender but not mushy.

Step 9

Using a slotted spoon, carefully remove the vegetables from the pot and transfer to a serving platter. If desired, toss the vegetables with butter for additional flavor.

Step 10

Remove the corned beef from the pot and let it rest for 10 minutes before slicing it against the grain into 1/4-inch thick slices.

Step 11

Arrange the sliced corned beef on the platter alongside the vegetables. Garnish with freshly chopped parsley before serving.

Step 12

Serve warm and enjoy with traditional Irish soda bread or mustard on the side, if desired.
