📝 Instructions

9 steps
1

In a bowl, combine the all-purpose flour, instant yeast, sugar, and salt.

2

Add ghee and yogurt to the flour mixture. Mix well.

3

Gradually add warm water and knead the mixture into a soft dough. Cover with a damp cloth and let it rest for 1 hour, until it doubles in size.

4

To make the filling, mash the boiled potatoes in a bowl and add chopped onion, green chilies, coriander leaves, cumin powder, coriander powder, chaat masala, and red chili powder. Mix thoroughly.

5

Divide the dough into equal-sized balls. Flatten each ball slightly and fill it with the potato mixture. Seal the edges and gently roll it into a round shape, about 6 inches in diameter.

6

Preheat a tandoor or oven, or place a tawa (griddle) on medium heat.

7

Place the rolled kulcha on the preheated tawa or in the oven. Cook until brown spots appear on one side, flip, and cook the other side.

8

Brush the cooked kulchas with butter for added flavor and serve hot.

9

Repeat the process for the remaining dough.
