Ingredients

  • 1 cup Almond butter
  • 0.5 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 3 cups Honey Nut O's cereal
  • 0.25 cup Almonds, sliced
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium saucepan over low heat, combine the almond butter and honey. Stir continuously until the mixture is smooth and well combined. This should take about 2 to 3 minutes.

Step 3

Remove the saucepan from the heat and stir in the vanilla extract and salt.

Step 4

In a large mixing bowl, add the Honey Nut O's cereal, sliced almonds, and optional mini chocolate chips. Pour the almond butter mixture over the cereal mixture.

Step 5

Use a spatula to gently fold the ingredients together until the cereal is fully coated with the almond butter mixture.

Step 6

Transfer the mixture to the prepared baking dish. Use the spatula or the back of a spoon to press the mixture firmly and evenly into the dish.

Step 7

Place the dish in the refrigerator for at least 1 hour, or until the bars have set.

Step 8

Once set, use the parchment paper overhang to lift the bars out of the dish. Place them on a cutting board and cut into 12 equal-sized bars.

Step 9

Store the bars in an airtight container in the refrigerator for up to 1 week.
