Ingredients

  • 4 medium (about 6 oz each) Russet potatoes
  • 4 cups Fat-free chicken broth
  • 1 cup Nonfat plain Greek yogurt
  • 1 medium Chopped onion
  • 2 stalks (chopped) Celery
  • 1 medium (chopped) Carrots
  • 2 cloves (minced) Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped green onions

Directions

Step 1

Peel and dice the Russet potatoes into bite-sized cubes and set aside.

Step 2

Heat a large pot over medium heat and lightly spray with nonstick cooking spray.

Step 3

Add the chopped onion, celery, and carrots and cook for 5 minutes, stirring occasionally, until the vegetables start to soften.

Step 4

Stir in the minced garlic and cook for 1 more minute, being careful not to let it burn.

Step 5

Add the diced potatoes to the pot along with the fat-free chicken broth. Stir well.

Step 6

Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the potatoes are fork-tender.

Step 7

Remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier soup, blend only half the mixture.

Step 8

Stir in the nonfat plain Greek yogurt, salt, and black pepper. Mix well to combine.

Step 9

Return the pot to low heat and gently warm the soup for 5 minutes, stirring occasionally.

Step 10

Ladle the soup into bowls and garnish with chopped green onions. Serve hot and enjoy!
