Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 0.5 cup (finely diced) onion
  • 2 cloves (minced) garlic
  • 0.5 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 cup frozen peas and carrots
  • 2 tablespoons (optional, for garnish) chopped fresh cilantro

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well and set aside.

Step 2

In a medium-sized saucepan, heat the vegetable oil over medium heat.

Step 3

Add the rice to the pan and toast it for 5–7 minutes, stirring frequently, until it turns a light golden brown.

Step 4

Add the diced onion to the pan and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Pour in the tomato sauce and chicken broth. Stir to combine. Add the salt and ground cumin, mixing well.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pan with a tight-fitting lid.

Step 7

Simmer the rice for 15 minutes without lifting the lid or stirring.

Step 8

After 15 minutes, quickly sprinkle the frozen peas and carrots over the top of the rice. Do not stir. Replace the lid and cook for an additional 5 minutes.

Step 9

Remove the pan from heat and let it sit, covered, for another 5 minutes to allow the remaining steam to finish cooking the rice.

Step 10

Fluff the rice gently with a fork. Garnish with chopped cilantro, if desired, and serve warm.
