Ingredients

  • 1 cup Fresh strawberries
  • 1 cup (diced) Fresh mango
  • 1 cup Fresh blueberries
  • 2 tablespoons Honey or maple syrup
  • 1 cup Greek yogurt (optional)
  • 1 cup Water or coconut water

Directions

Step 1

Wash and prepare all the fruits. Hull and slice the strawberries, dice the mango, and ensure that the blueberries are clean and dry.

Step 2

In a blender, add the strawberries along with 1/3 cup of water or coconut water. Blend until smooth. Taste and add 1 teaspoon of honey or maple syrup if additional sweetness is needed. Pour the strawberry mixture into your popsicle molds, filling about 1/3 of each mold. Place the molds in the freezer for about 15 minutes to set slightly.

Step 3

Rinse the blender and repeat the process with the mango and another 1/3 cup of water or coconut water. Blend until smooth and sweeten as needed. Remove the popsicle molds from the freezer and pour the mango mixture on top of the strawberry layer, filling another 1/3 of each mold. Return the molds to the freezer for another 15 minutes.

Step 4

Finally, rinse the blender again and blend the blueberries with the remaining 1/3 cup of water or coconut water. Sweeten as needed. Pour the blueberry mixture on top of the mango layer, filling the popsicle molds to the top. Insert popsicle sticks into each mold and freeze for at least 4-6 hours, or until completely solid.

If you’d like a creamier version, mix the Greek yogurt into each fruit layer before blending. Adjust the amount of water or coconut water accordingly to maintain a smooth consistency.
