Ingredients

  • 1 pound dried black beans
  • 8 cups water
  • 1 medium green bell pepper
  • 1 medium onion
  • 4 large garlic cloves
  • 2 tablespoons olive oil
  • 1 leaf bay leaf
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Rinse the dried black beans thoroughly under cold water to remove any dirt or debris. Place the beans in a large bowl and cover with water. Soak overnight (8-12 hours).

Step 2

Drain and rinse the soaked beans. Transfer them to a large pot and add 8 cups of water. Bring to a boil over medium-high heat.

Step 3

Cut the green bell pepper in half, remove the seeds, and add one half to the pot with the beans. Reserve the other half for later. Add the bay leaf to the pot as well.

Step 4

Reduce the heat to low and simmer the beans uncovered for about 60-90 minutes, or until they are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

Step 5

While the beans are cooking, finely chop the remaining half of the green bell pepper and the onion. Mince the garlic cloves.

Step 6

In a medium skillet, heat the olive oil over medium heat. Add the chopped bell pepper, onion, and garlic. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.

Step 7

Once the beans are tender, remove the bay leaf and the half green pepper from the pot. Discard them.

Step 8

Stir the sautéed vegetables into the pot with the beans. Add the cumin, oregano, vinegar, sugar, salt, and black pepper. Stir well to combine.

Step 9

Simmer the beans for an additional 30 minutes on low heat to allow the flavors to meld. Taste and adjust seasoning if necessary.

Step 10

Serve the Cuban black beans hot over steamed white rice, and enjoy your taste of Abuela's kitchen.
