Ingredients

  • 4 pieces Sourdough bread slices
  • 1.5 cups Cheddar cheese (sharp or mild), shredded
  • 2 pieces Cooked sausage links (preferably smoked or Italian), sliced
  • 0.25 cup Kalamata olives, pitted and sliced
  • 2 tablespoons Unsalted butter, softened
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Fresh parsley, chopped (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a small bowl, mix together mayonnaise, Dijon mustard, salt, and black pepper until combined. Set aside.

Step 2

Spread softened butter on one side of each sourdough bread slice. Flip the bread slices so the unbuttered side faces up.

Step 3

Spread the prepared mayo-mustard mixture on the unbuttered sides of two slices of bread.

Step 4

Evenly distribute the shredded cheddar cheese on top of the mayo-covered bread slices.

Step 5

Add the sliced sausages and sliced Kalamata olives on top of the cheddar layer. Sprinkle with chopped fresh parsley if desired for added flavor.

Step 6

Place the remaining bread slices on top, buttered side facing out, to form two sandwiches.

Step 7

Heat a large skillet or griddle over medium heat. Place the sandwiches onto the skillet and cook for 3-4 minutes on one side, pressing gently with a spatula to encourage even toasting and melting.

Step 8

Flip the sandwiches carefully and cook for another 3-4 minutes on the other side, or until the bread is golden brown and the cheese is fully melted.

Step 9

Remove the sandwiches from the skillet and let them rest for 1 minute before slicing in halves or quarters for serving.

Step 10

Serve immediately and enjoy your warm, flavorful and cheesy Abbey's Melted Cheddar Sausage and Olive Sandwich.
