Ingredients

  • 3 lb Russet potatoes
  • 1 cup Mayonnaise
  • 2 tbsp Yellow mustard
  • 1 tbsp Apple cider vinegar
  • 1 tsp Granulated sugar
  • 1.5 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 medium Celery stalks, diced
  • 1 small Sweet onion, finely chopped
  • 3 large Hard-boiled eggs, chopped
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Paprika (for garnish)

Directions

Step 1

Peel and cut the Russet potatoes into 1-inch cubes. Place them in a large pot and cover with cold water.

Add a teaspoon of salt to the water, then bring the pot to a boil over medium-high heat. Reduce the heat to simmer and cook for 10-15 minutes, or until the potatoes are fork-tender.

Step 3

Drain the potatoes and allow them to cool to room temperature. Set aside.

Step 4

In a large mixing bowl, combine the mayonnaise, yellow mustard, apple cider vinegar, granulated sugar, remaining salt, and black pepper. Whisk to create a smooth dressing.

Step 5

Add the cooled potatoes to the dressing and toss gently to coat.

Step 6

Fold in the diced celery, sweet onion, hard-boiled eggs, and fresh parsley. Mix until evenly distributed.

Step 7

Transfer the potato salad to a serving bowl and sprinkle with paprika for garnish.

Step 8

Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Serve chilled and enjoy!
