  • 300 grams Pork belly
  • 120 ml Soy sauce
  • 60 ml Mirin
  • 1 liters Chicken stock
  • 10 grams Dried kombu (seaweed)
  • 20 grams Bonito flakes
  • 400 grams Ramen noodles
  • 4 whole Eggs
  • 2 tablespoons Sesame oil
  • 4 whole Garlic cloves
  • 30 grams Ginger
  • 2 whole Green onions
  • 100 grams Corn kernels
  • 100 grams Bamboo shoots
  • 1 teaspoon Salt
  • 1 teaspoon Sugar

Directions

Step 1

Start by preparing the pork belly. In a medium bowl, mix 60ml soy sauce, 30ml mirin, 1 teaspoon sugar, and 1 teaspoon salt. Marinate the pork belly in this mixture for 30 minutes.

Step 2

Preheat your oven to 180°C (350°F). Place the marinated pork belly on a baking sheet and roast for 45 minutes, basting it every 15 minutes with the marinade. Once cooked, slice it thinly and set aside.

Step 3

While the pork is roasting, prepare the broth. In a large pot, heat 1 liter of chicken stock over medium heat. Add the kombu and bring it to a simmer. After 10 minutes, remove the kombu and discard.

Step 4

Add bonito flakes, 60ml soy sauce, 30ml mirin, grated ginger, and minced garlic to the broth. Simmer for 20 minutes, then strain the broth to remove solids and keep it warm on low heat.

In another pot, bring water to a boil. Gently lower the eggs into the water and boil for 7 minutes. Transfer them to an ice bath to cool. Once cooled, peel the eggs and marinate them in a mixture of 60ml soy sauce and 30ml mirin for at least 15 minutes.

Cook the ramen noodles according to package instructions. Drain and toss them in 2 tablespoons of sesame oil to prevent sticking.

Step 7

To assemble the ramen, divide the cooked noodles into 4 bowls. Pour the hot broth over the noodles.

Step 8

Top each bowl with slices of roasted pork belly, a marinated egg cut in half, a handful of corn kernels, bamboo shoots, and sliced green onions. Optional: Add additional toppings such as nori sheets or chili oil for extra flavor.
